Bay Area Food Bank Fund Raiser

On Tuesday September 29, 2009 I will be joining four other Mobile area chefs in preparing a five-course dinner to benefit the Bay Area Food Bank.  My inclusion comes by invitation after my unsuccessful bid to win the entrée division of the BAFB’s Chef Challenge this past summer.  Apparently the consolation prize for getting your clocked cleaned is making salad for 150 people.

The theme of the dinner is traditional Italian cuisine so I will be doing the classic insalata caprese.  This simple salad consists of tomato slices, mozzarella and fresh basil leaves drizzled with extra virgin olive oil.  Only my version will be a little different, instead of fresh basil leaves dressed with olive oil I’m making a basil infused oil.  The deep green dressing should make for a beautiful presentation especially with a nested micro green garnish.

Chef Bruce Crosby of Crosby Catering is making Alfredo Soup.
Chef Stuart Reb Donald of Mars Hill Café will serve Insalata Caprese.
Chef Dan Navarro Jr. of Camille’s Sidewalk Cafe is making Eggplant Roletino.
Chef Will Hughes of Will Hughes Catering serves his Veal Osso Bucco with smoked polenta cake, frizzled leeks, prosciutto and natural salami. See why I lost?
Ronald Menyfield of Macaroni Grill is supplying the chain’s famous Three Berry Tiramisu for dessert.

In addition to the dinner there will a silent auction featuring, among other things, a football autographed by former LSU Tiger and current Oakland Raiders quarterback JaMarcus Russell and a porcelain bowl autographed by Alabama native Courtney Cox and her actor hubby David Arquette  Tickets are still available so visit the Bay Area Food Bank website for more information or call  251-653-1617 .
